Golden Mango Protein Cookies {Gluten-Free & Grain-Free} Sweetly spiced, soft baked cookies that combine delicious mango flavor with superfood Turmeric! High in protein from beans, gluten-and grain-free, and easy to make…these cookies will be your new favorite way to enjoy the spice of the moment!

Ingredients:


  • 75 grams chickpeas (about a ½ cup), rinsed and drained
  • 80 grams dried mango, chopped + ⅓ cup water, soaked overnight
  • 3 tbsp AllWhites liquid egg whites
  • ½ tsp turmeric
  • ½ tsp vanilla bean powder
  • ½ tsp baking powder
  • sweetener, to taste if you like a sweeter cookie

Instructions:


  1. Place dried mango and water in a bowl and soak overnight (or a at least a few hours).
  2. Preheat oven to 350. Prep a baking sheet with parchment paper. Place mango and soaking water in a food processor and pulse until almost smooth. Add remaining ingredients to the food processor and blend until smooth.
