The Ultimate Classic Carrot Cake

Ingredients:

For the carrot cake:

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 large eggs
  • 1 1/4 cups vegetable oil (or canola oil, grapeseed oil, etc.)
  • 3/4 cups unsweetened, chunky applesauce
  • 1 teaspoon vanilla extract
  • 2 cups carrots, shredded (about 5 small carrots)
  • 1 (15 ounces) can pineapple, drained and chopped
  • 1 cup walnuts, chopped

For the cream cheese frosting:

  • 1 cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 - 1 1/2 cups powdered sugar
  • 1 cup walnuts, chopped

Instructions:


  1. Preheat oven to 350 degrees, and grease three 8-inch round cake pans with nonstick spray.
  2. In large bowl, whisk together flour, sugar, cinnamon, baking powder, baking soda and salt.
  3. In a small bowl, whisk together eggs, oil, applesauce and vanilla.
